Ingredients
- 3 medium Russet potatoes
- 2 cups Shredded chicken, cooked
- 1½ cupsColby jack cheese, shredded
- Toby’s Blue Cheese Dressing & Dip
- 3 tbsp Bacon bits
- 3 tbsp Feta cheese crumble
- Fresh chives, finely chopped
- Salt & pepper, to taste
Instructions
Gather all ingredients. Preheat the oven to 400 F. Puncture potatoes with a fork and wrap in foil. Place on a baking sheet and bake for 55 minutes until tender. Split potatoes immediately to keep fluffy texture and partially hollow out. Fill each with shredded chicken and top with shredded cheese. Bake again for another 5 minutes until the cheese is melty.
Let cool for a bit, then drizzle with Toby’s Blue Cheese Dressing & Dip and top with bacon bits, fresh chives and feta cheese crumble.
