Ingredients
- 3 large Carrots, chopped
- 1 cup Cauliflower florets
- 2 tbsp Olive oil
- ¼ tsp Salt & pepper, to taste
- 1 tsp Paprika
- 1 tsp Chili powder
- 1 tbsp Garlic, minced
- 4 cups Kale, chopped
- 1 cup Quinoa, cooked
- Toby’s Yogurt Ranch Dressing & Dip
- 1 tbsp Chives, finely chopped
- 1 tbsp Pepitas
Instructions
Gather all ingredients. Heat a large skillet over medium high heat and add olive oil. Add carrots and let sear for 5 minutes, then add cauliflower, salt & pepper, paprika, chili powder, and garlic. Cook for another 10 minutes, then add in kale and cook for 5 more minutes, stirring frequently. Remove from heat and set aside.
In 1-2 bowls, add a bed of quinoa and top with roasted veggies. Drizzle with Toby’s Yogurt Ranch Dressing & Dip, then finish off with chives and pepitas.
