Gather all ingredients. Add a small amount of oil to a pan, then add chickpeas. Cook on high-medium heat for 3-4 minutes. Add basil leaves and cook for another minute. Mix in nutritional yeast, salt, pepper, and stir. Remove from heat.
Toast your slices of bread. Add Toby’s Original to toast. Then smashed avocado and chickpeas.
Top with sun-dried tomatoes and sprinkle with nutritional yeast. Enjoy!
