Ingredients
- 1 english Cucumber, cored and thickly sliced
- 1 large avocado, chopped
- 6 oz chickpeas, canned
- 1 tbsp Olive oil
- Salt & pepper, to taste
- 1 tsp garlic powder
- ½ tsp chili powder
- 1 tbsp fresh dill, chopped
- 2 Lemon wedges
- Toby’s Feta Cheese Dressing & Dip
Instructions
Gather all ingredients. Preheat a skillet over medium high heat. Add drained chickpeas and olive oil. Season with salt & pepper, garlic powder, and chili powder. Cook for 15 minutes tossing halfway through until liquid is absorbed and chickpeas are lightly charred.
In a large serving bowl, add cucumber, avocado, roasted chickpeas, and dill. Squeeze over with lemon and toss until well incorporated. Drizzle with Toby’s Feta Cheese Dressing & Dip. Serve and enjoy your Cucumber Feta Salad!
