Ingredients
- 2 cups Cauliflower florets
- 5 Mini bell peppers, halved & sliced
- 5 medium Carrots, halved & sliced
- 1 english cucumber, sliced
- ½ cup Radishes, halved
- ¼ cup cherry tomatoes, halved
- 4 Hard boiled eggs, peeled
- 1 slice cheddar cheese
- Curly parsley
- Toby’s Plant Based Dip & Spread
- Toby’s Feta Cheese Dressing & Dip
Instructions
Gather all ingredients. Center a ramekin of Toby’s Feta Cheese Dressing & Dip on a large serving platter. Arrange cauliflower around the top edge for the face and lay out cucumber for the ears. Cover the ears with sliced red peppers and line with smaller cauliflower florets.
Fill 6 orange pepper halves with Toby’s Plant Based Dip & Spread and arrange on the platter and fill out the empty space with cucumber, carrots, radishes, cherry and tomatoes.
Slice the boiled eggs in half and remove the yolk. Combine yolk with salt, pepper, paprika, and a ¼ cup of Toby’s Feta Cheese Dressing & Dip. Mix well and refill eggs.
Arrange the eggs, cheese cutouts, and parsley then detail the bunny face and baby chick deviled eggs with leftover veggie pieces for the finishing touch. Serve and enjoy your Easter Bunny Charcuterie!
