Gingerbread with Apple Cider Glaze

- ½ cup unsalted butter
- ½ cup dark brown sugar
- 1 cup unsulphured molasses
- 1 large egg
- 1 tsp. vanilla extract
- 2 ½ cups all-purpose flour
- 1 ½ tsp. baking soda
- 1 tsp. ground cinnamon
- 1 tsp. ground ginger
- ½ tsp. ground cloves
- ¾ tsp. salt
- 1 bottle Genesis Organic Ginger Apple Juice
- Whipped Cream, optional
Gather all ingredients. Preheat the oven to 350 degrees F. Grease and flour a 9″x 9″ glass or metal baking pan and set aside.
Combine butter and brown sugar in a large bowl and use an electric mixer to beat until creamy. Add molasses and stir until well combined. Add egg and vanilla extract and stir well.
In a separate bowl, whisk together flour, baking soda, ground cinnamon, ground ginger, ground cloves, and salt. Gradually add dry ingredients to wet and stir until completely combined.
Add the bottle of Genesis Organic Ginger Apple Juice to a pot and bring to a boil and carefully add a cup to the mixture. Mix until ingredients are smooth and well-combined.
Cover and continue simmering the remaining juice for 10 minutes until reduced.
Meanwhile, pour batter into the baking pan and bake in the center rack for 40 minutes or until fully baked through.
Allow to cool, then brush over with the reduced glaze. Slice and serve with a swirl of whipped cream and dust over with some ground cinnamon. Enjoy your Gingerbread with Apple Cider Glaze!
