Ingredients
Grilled Avocados
- 6 large avocados
- Juice of 1 lime
- 1 tbsp. olive oil
Vegetable Quinoa
- 1 cup quinoa, cooked
- 4 spring onions, sliced
- 1/4 cup cucumber, chopped
- 4 cherry tomatoes, finely chopped
- 1/4 cup sweet corn, cooked
- 1 handful fresh parsley, chopped
- 1 handful fresh coriander, chopped
- Juice of 1 lemon
- 2 tbsp. olive oil
- Toby’s Blue Cheese Dressing & Dip
Instructions
To begin preparing your Grilled Avocados with Vegetable Quinoa, gather all of the ingredients. Prepare the quinoa according to the package instructions.
In a medium bowl, add in the sliced spring onions, chopped cucumber, finely chopped tomatoes, cooked sweet corn, fresh chopped parsley, chopped coriander, lemon juice, and olive oil. Add in the prepared quinoa, then mix everything thoroughly and set it aside.
Next, heat up the grill, or grill pan to medium-high heat. Halve the avocados and remove the seed, but make sure to leave the skin on. Brush the flat surface of each avocado half with lime juice followed by olive oil. If you are using a grill, brush the grill with oil – this step is not needed for a grill pan.
Place the avocados flat side down and grill for about 3 minutes, or until a char mark appears. Remove the avocados from the grill and let them cool.
Stuff each avocado with a spoonful of the vegetable quinoa. Top with Toby’s Blue Cheese Dressing & Dip. Serve and enjoy your Grilled Avocados with Vegetable Quinoa!
