Ingredients
- 2 cups Red onion, chopped
- 12 Frozen jumbo shrimp, dethawed or blanched
- 2 cups Zucchini, thickly sliced & halved
- 1 cup Red bell pepper, chopped
- Salt & pepper, to taste
- Favorite grill seasoning mix
- 1 tbsp Fresh cilantro, finely chopped
- Fresh lime wedges
- Toby’s Blue Cheese Dressing & Dip
Instructions
Gather all ingredients. Preheat the oven to 400 F.
Soak wooden skewers for 10 minutes, then add on red onion, shrimp, zucchini, and red bell pepper alternatingly. Arrange on a foil lined baking sheet and spray with cooking oil. Season generously with your favorite grill seasoning mix and salt & pepper to taste.
Bake the skewers in the oven for 25 minutes until veggies are tender and shrimp is cooked fully.
Top with fresh cilantro. Serve with a ramekin of Toby’s Blue Cheese Dressing & Dip and fresh lime wedges. Enjoy your Grilled Shrimp & Veggie Skewers!
