Ingredients
- 1 cup orzo, dry
- 1 cup red bell pepper, chopped
- 1 cup zucchini, chopped
- ½ cup yellow squash, chopped
- ½ cup red onion, finely chopped
- 1 tbsp olive oil
- ½ tsp salt & pepper, to taste
- Toby’s Blue Cheese Dressing & Dip
Instructions
Gather all ingredients. Heat a skillet over medium high heat and add olive oil. Add bell pepper, zucchini, yellow squash, and red onion. Season with salt & pepper, and cook for 8 minutes until fully cooked and tender.
Meanwhile, bring a small pot of water to boil and add in orzo. Cook for 7-8 minutes until fully cooked and strain.
Plate orzo and top with roasted veggies. Top with Toby’s Blue Cheese Dressing & Dip, serve, and enjoy your Grilled Vegetable Orzo Salad!
