Ingredients
- 2 tbsp olive oil
- Zucchini squash
- Yellow squash
- Mini peppers, deseeded & halved
- Brocolini
- Cherry tomatoes
- ½ tsp Garlic powder
- 1 tsp Onion powder
- ½ tsp Paprika, optional
- ½ tsp Salt & pepper, to taste
- Toby’s Feta Cheese Dressing & Dip
- Toby’s Yogurt Ranch Dressing & Dip
Instructions
Gather all ingredients. Heat a grill pan over medium high heat, brush with half the olive oil. Lay out zucchini, yellow squash, mini peppers, and cherry tomatoes. Brush over with the rest of the oil and cook for 20 minutes, adding garlic powder, onion powder, paprika, and salt & pepper as you flip halfway through. Veggies should be tender with charred grill marks.
Plate the veggies and serve with a ramekin of Toby’s Feta Cheese Dressing & Dip and Toby’s Yogurt Ranch Dressing & Dip. Serve and enjoy your Grilled Veggie Platter!
