- 8 oz baby red potatoes
- 8 oz baby yukon gold potatoes
- 1 tbsp garlic, minced
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- Salt & pepper, to taste
- 1 tbsp olive oil
- Toby’s Feta Cheese Dressing & Dip
Gather all of the ingredients. Preheat the oven to 400 F. In a medium baking dish, add potatoes, garlic, rosemary, thyme, and salt & pepper. Drizzle with olive oil and toss until evenly coated. Bake in the oven for 30 minutes, or until fork tender.
Serve with a ramekin of Toby’s Feta Cheese Dressing & Dip, or drizzle on top. Enjoy your Herb Roasted Mini Potatoes!
