Gather all of the ingredients. Start by halving the tomatoes horizontally. Roll out eight 25 oz. balls of puff pastry and use your thumb to make a small bowl. Fill each pastry with a bit of basil pesto, one tomato half, and shredded cheese. Carefully seal and flour the pastry as needed.
Preheat the oven to 475 F and lightly grease a medium baking sheet with some cooking spray or cooking oil. Place each pizza bite evenly apart. Beat an egg thoroughly then lightly brush the top of each bite with egg wash. Let them bake for 15-20 minutes until golden brown. Then remove and let cool.
Dab the top of each pizza bite with a bit of melted butter, coat with grated parmesan, and sprinkle with freshly chopped basil. Dip with Toby’s Probiotic Yogurt Ranch Dressing & Dip and enjoy your Homemade Pizza Bites!
