Gather ingredients. Start by rinse the rice twice over and cook it using a rice cooker, or stovetop method.
To prepare rice using the stovetop, bring the water to boil in a medium pot. Pour in the rice then set the burner to low, cover with a lid and let steam for 15 minutes, then fluff it up. Optional to add a bit of rice vinegar, but we like the added flavor. Cover again for 10 more minutes until the rice has fully absorbed the remaining liquid.
Prepare the tofu by using this recipe for Toby’s Perfectly Seasoned Tofu. Meanwhile, prepare all the veggies and set aside. Once the rice and tofu are done, spoon about 2 cups of rice into a medium bowl. Top with cabbage, carrots, cucumber, tomato, tofu, and avocado. Drizzle over with a hearty serving of Toby’s Yogurt Ranch Dressing & Dip, then garnish with a couple leaves of fresh basil, and some jalapeno slices.
