Mediterranean Veggie Sandwich with Plant Based Dip & Spread

- ⅓ cup zucchini, sliced
- ½ tbsp olive oil
- Salt & pepper to taste
- 2 slices artisan bread
- Toby’s Plant Based Dip & Spread
- 3 tbsp sun dried tomatoes, jarred
- 1 tbsp goat cheese, sliced
- ½ cup baby spinach
- 1 green olive, pitted
Gather all ingredients. Heat a skillet to medium high heat and add olive oil. Add in zucchini and salt & pepper, then cook for 10 minutes until tender and lightly charred, stirring occasionally.
Meanwhile, toast the bread and spread over with Toby’s Plant Based Dip & Spread on one side of each slice. Top one slice of bread with sun dried tomatoes, zucchini, goat cheese, spinach, and the other slice of bread – dip side faced down.
Add a skewer with an olive to hold it together, serve with your side of choice, and enjoy your Mediterranean Veggie Sandwich!
