Gather all ingredients. Heat a skillet to medium high heat and add olive oil. Add in zucchini and salt & pepper, then cook for 10 minutes until tender and lightly charred, stirring occasionally.
Meanwhile, toast the bread and spread over with Toby’s Plant Based Dip & Spread on one side of each slice. Top one slice of bread with sun dried tomatoes, zucchini, goat cheese, spinach, and the other slice of bread – dip side faced down.
