Parmesan Roasted Red Potatoes with Feta Cheese

- 1 ½ pounds baby red potatoes, sliced
- 2 cloves garlic, minced
- ¼ cup olive oil
- 1 tbsp. Italian seasoning
- 2 tsp. salt
- ½ tsp. black pepper
- ¼ cup parmesan cheese, grated
- Parsley, fresh and chopped, to garnish

To begin preparing your Parmesan Roasted Red Potatoes, gather all of the ingredients. Heat up the oven to 400 degrees F. Line a baking sheet with tin foil and lightly oil it, or you can just use cooking spray.
In a large bowl, add the sliced potatoes, olive oil, garlic, salt and pepper, Italian seasoning, and grated parmesan cheese. Mix well or toss it all together to coat the potatoes evenly.
Next, spread out the potatoes evenly in one layer onto the prepared baking sheet from earlier and put the tray in the oven. Bake your potatoes for 35 minutes, or until they become a light golden brown and crispy.
Remove the tray from the oven and sprinkle over with some fresh parsley, additional grated parmesan cheese, and sprinkle over some flaky salt to taste. Serve your dish with a ramekin of Toby’s Feta Cheese Dressing & Dip for dipping. Enjoy your Parmesan Roasted Red Potatoes!
