Ingredients
Salad Fixings
- 2 cups Romaine, chopped
- ½ cup Frozen edamame, dethawed
- ½ cup Cucumber, sliced
- ¼ cup Cherry tomatoes, sliced
- ¼ cup Red onion, thinly sliced
- 1 Avocado, sliced
- Toby’s Plant Based Dip & Spread
- Fresh cilantro, chopped
Peanut Sauce
- 2 tbsp Peanut butter
- 2 tbsp Hoisin sauce
- 1 tsp tomato paste
- 1 tbsp Sesame oil
- 1 tsp Sesame seeds
- 2 tbsp Water, as needed
Instructions
Gather all ingredients. In a bowl, combine peanut butter, hoisin sauce, tomato paste, sesame oil, and sesame seeds. Mix until fully incorporated. Add water as needed to thin the sauce to desired consistency.
In a large serving dish, arrange a bed of lettuce, add edamame, cucumber, cherry tomatoes, red onion, and avocado. Drizzle with peanut sauce and add a dollop of Toby’s Plant Based Dip & Spread.
