Ingredients
- 1 cup polenta, uncooked
2 cups chicken stock, cab sub for veggie stock
½ cup parmesan, grated
Salt & pepper, to taste
3 tbsp. butter, melted
3 tbsp. olive oil
2 tbsp. fresh thyme leaves

Instructions
Gather all of the ingredients. In a medium pot, combine polenta and chicken stock. Heat over medium-high heat, mixing constantly, until mixture becomes thick like grits, around 10 minutes.
Remove from heat and add in the parmesan cheese, salt, pepper, and butter. Spread out the polenta mixture in a baking dish so the mixture is about half an inch thick, then place in the freezer for 30 minutes until mixture becomes stiff.
Meanwhile, preheat the oven to 375 degrees F. Remove the mixture from the freezer and cut up the polenta into ½” by 2” strips. Arrange on a greased baking pan so they aren’t touching and bake fries for 10 minutes.
Remove and let cool. Sprinkle fries with fresh thyme. Serve with a ramekin of Toby’s Feta Cheese Dressing & Dip and enjoy your Polenta Fries with Feta!
