Ingredients
- 1 cup quinoa, rinsed well
- 1 large english cucumber, diced
- 1 pint cherry tomatoes, halved
- 2/3 cup parsley, chopped
- 1/2 cup fresh mint, chopped
- 2 scallions, thinly sliced
- 2 tbsp. lemon juice
- 1 garlic clove, minced
- 1/2 cup extra-virgin olive oil
- Salt and pepper, to taste
- 1/4 cup Toby’s Feta Cheese Dressing & Dip, for topping
Instructions
To begin preparing your delicious Quinoa Salad with Feta Cheese Dressing & Dip, gather all your ingredients. Prepare the quinoa according to it’s own package instructions. Once the quinoa is fully cooked, spread it out on a large rimmed baking sheet and let it cool.
Meanwhile, in a large bowl, whisk the lemon juice and minced garlic clove together. Then, gradually whisk in the extra-virgin olive oil until fully mixed.
Once you’ve completed preparing your lemon and garlic mixture, transfer the quinoa to the same large bowl.
Now add in your diced cucumber, halved cherry tomatoes, chopped parsley, chopped mint, salt, pepper, and thinly sliced scallions. Toss everything until it’s fully coated.
To finish off your quinoa salad, dollop some spoonfuls of Toby’s Feta Cheese Dressing & Dip on top, to taste. Enjoy your delicious Quinoa Salad with Feta!
