Zucchini Fries with Blue Cheese Dressing & Dip

- 3 large zucchini, cut into 1/2” x 3” pieces, similar to fries
- 1/2 cup panko breadcrumbs
- 1/3 cup all-purpose flour
- 1/4 cup parmesan cheese, grated
- 1/4 tsp. onion powder
- 2 large egg whites
- Salt and pepper, to taste
- Olive oil
- Toby’s Blue Cheese Dressing & Dip, for dipping
To begin making Zucchini Fries with Blue Cheese Dressing & Dip, gather all ingredients. Heat the oven to 425 degrees F. Coat a large baking sheet with olive oil or a sheet of parchment paper.
Spread the sliced zucchini pieces onto paper towels and lightly pat dry. Leave the pieces on the towels while you prepare the breadcrumb coating.
In a shallow dish combine the panko crumbs, flour, parmesan, salt, onion powder, and pepper.
In a separate large bowl, whisk the egg whites until lightly foamy. Place 5 sticks of zucchini in the bowl with the egg whites and toss to coat them evenly.
Shake off any excess egg white, then add them to the bowl with the panko crumbs. Coat them evenly. Arrange the zucchini on the baking sheet. Repeat with the remaining zucchini.
Bake for 10 minutes, then remove from the oven and lightly coat with olive oil. Return to the oven, rotating the pan 180 degrees, then continue baking for 10 additional minutes, until the bread crumbs are golden crisp and the insides are tender. Remove from the oven and let cool for 5 minutes before serving.
