Ingredients
- 4 slices Artisan bread, toasted
- Toby’s Original Dip & Spread
- 1 Large sweet potato, thickly sliced
- ¼ tsp Chili powder
- ½ tsp Garlic powder
- ¼ tsp Paprika
- ¼ tsp Salt & pepper, to taste
- Microgreens, radish
- Avocado, sliced
- Red onion, thinly sliced
- Chips, to serve
Instructions
Gather all ingredients. Preheat a pan over medium heat and add olive oil. Add sweet potato slices to the pan and sprinkle with half the chili powder, garlic powder, paprika, and salt & pepper to taste. Cook for 5 minutes then flip and sprinkle with remaining spices, cooking for 5 more minutes. Flip again and add a small amount of water (1 Tbsp) then cover with lid and steam for the remaining 5 minutes until cooked through and tender. Remove from heat.
Meanwhile, spread Toby’s Original Dip & Spread on half the bread slices. Place on a cutting board, dip face up, and place sweet potato cutlets on top. Fix with microgreens, avocado slices, and red onion. Top with second slices and garnish with a microgreen sprig.
