Ingredients
- 3 Salmon cutlets
- ¼ cup Panko breadcrumbs
- ¼ cup Parmesan cheese, grated
- ½ tsp Salt &pepper, to taste
- 1 tbsp Olive oil
- 6 cups Romaine, chopped
- Toby’s Caesar Dressing & Dip
- ¼ cup Croutons
- 1 tbsp Fresh dill, finely chopped
- 1 Lemon, sliced & quartered
Instructions
Gather all ingredients. Preheat the oven to 450 F. On a lined or greased wired rack fitted baking pan, arrange salmon cutlets evenly apart. In a bowl, combine breadcrumbs, parmesan cheese, and salt & pepper to taste. Mix until well combined, then spoon mixture over each salmon cutlet. Bake for 10 minutes until golden brown and salmon is cooked through.
In a serving bowl or 3 individual bowls, arrange a bed of chopped romaine, croutons, salmon cutlets, and drizzle with Toby’s Caesar Dressing & Dip. Sprinkle with more parmesan, dill, pepper to taste.
