Ingredients
Stir Fry
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 2 cups broccoli, chopped
- 1 cup mushrooms, sliced
- ½ cup water chestnuts
- 1 tbsp. olive oil
- Optional veggies: carrots, green peas, baby corn, sugar snap peas
Sauce
- ½ cup Genesis Organic Ginger Apple Juice, add more if needed
- ¼ cup soy sauce
- 1 tsp. sesame oil
- 3 garlic cloves, minced
- 1-2 tbsp. brown sugar, can sub for coconut sugar or agave
- 1 tbsp. corn starch
Instructions
To begin preparing your Sesame Ginger Vegetable Stir Fry, gather all ingredients. In a large skillet or wok, add olive oil.
On medium-high heat, add sliced bell peppers, mushrooms, broccoli, and water chestnuts. Cook for 4-5 minutes until vegetables are almost tender.
In a small bowl, whisk together soy sauce, Genesis Organic Ginger Apple Juice, minced garlic, brown sugar, sesame oil, and cornstarch.
Pour liquid mixture over vegetables and cook until the sauce has thickened, around 3-5 more minutes. Remove from heat and plate with rice.
Garnish with chopped green onions and sesame seeds. Enjoy!
