Ingredients
- 1 Small avocado, halved and pitted
- ¼ cup Blueberries, fresh
- ¼ cup Green bell pepper, sliced saving bottom portion
- ¼ cup Yellow bell pepper, sliced
- ¼ cup Baby carrots, halved lengthwise
- ¼ cup Red bell pepper, sliced
- ¼ cup Broccoli florets
- 1 Cucumber, sliced
- ¼ cup Snap peas
- ¼ cup celery, chopped
- Toby’s Plant Based Dip & Spread
- Toby’s Ranch Dressing & Dip
Instructions
Gather all ingredients. Place down half the avocado and arrange blueberries, green bell pepper slices, yellow bell pepper, baby carrots, and red bell peppers in the shape of a rainbow arching towards the avocado. Tuck in broccoli to support avocado and arrange cucumber, snap peas, and celery. Leave space for the bottom slice of the green bell pepper to create a shamrock. Serve with a ramekin of Toby’s Ranch Dressing & Dip and fill the avocado with Toby’s Plant Based Dip & Spread to find the pot of gold. Serve and enjoy your Shamrock Snack Plate!
