Ingredients
- 2-3 boneless, skinless chicken breasts -or- 2 packs organic tofu, drained and pressed
- 1 cup buttermilk
- 1 large egg
- 1 1/4 cups all purpose flour
- 1/2 tbsp. corn starch
- 3 tbsp. powdered sugar, optional
- Salt and pepper, to taste
- Sunflower oil, or your favorite oil for frying
- Toby’s Honey Mustard Dressing & Dip
Instructions
Gather all ingredients. If using chicken, cube chicken breasts into bite sized pieces, trimming away any excess skin.
If using tofu, we recommend extra firm organic tofu. Drain and press the tofu, then crumble or dice into small, bite sized pieces.
In a medium bowl, whisk together buttermilk and egg. Place cubed chicken or tofu into the buttermilk and egg mixture. Cover the bowl and place in the refrigerator for around one hour.
When ready to cook, heat oil in your skillet or deep fryer to medium-high heat, around 375 degrees F.
In a gallon sized bag, combine flour, powdered sugar, corn starch, salt, and pepper. Seal and shake the bag well to combine ingredients. Add in cubed chicken, or tofu, to the flour mixture. Seal and shake until chicken or tofu is fully coated.
Gradually add the coated chicken or tofu to the hot oil, be careful not to overcrowd the pan.
Cook until golden brown, around 4-6 minutes. The internal temperature of the chicken should be 165 degrees F. Remove the fried nuggets and drain on paper towels. Continue these steps until all your chicken or tofu is cooked.
