Ingredients
- 4 oz Canned yellow corn, drained
- 4 oz Canned Black beans, drained
- ¼ cup sweet peppers, chopped
- ¼ cup green onion, sliced
- ¼ cup colby jack cheese, shredded
- ¼ Toby’s Jalapeño Ranch Dressing & Dip
- 6 eggroll wrappings
Instructions
Gather all ingredients. In a bowl, combine corn, black beans, peppers, green onion, cheese, and Toby’s Jalapeño Ranch Dressing & Dip. Mix well until fully combined. Add more Jalapeño Ranch to reach desired consistency.
Lay out egg roll wrapping and add about 1-2 tablespoons of the mixture to the center. Roll diagonally from the corner folding in the edges halfway through.
Place rolls in a greased airfryer basket and spray with non-stick cooking oil. Cook at 400 F for 20 minutes, flipping the rolls halfway through until golden brown.
Remove from the air fryer and plate with a ramekin of Jalapeño Ranch. Serve and enjoy your Southwestern Egg Rolls!
