Ingredients
- ½ lb Ground beef
- 1 tbsp Taco seasoning
- 4 Flour tortillas, 6”
- 1 cup Refried beans
- 4 Tbsp Red enchilada sauce
- 1 cup Colby Jack cheese, shredded
- ¼ cup Tomatoes, diced
- ¼ cup Black olives, sliced
- 4 tbsp Toby’s Jalapeno Ranch Dressing & Dip
- 1 Green onion, sliced
- ¼ cup Iceberg lettuce, shredded
Instructions
Gather all ingredients. Preheat the oven to 350 F. Heat a skillet to medium high heat and add 2 tbsp of water. When simmering add in ground beef and taco seasoning. Mix occasionally for 10 minutes until cooked through.
Lay out two tortillas and divide refried beans between them, spreading it to the edges. Top with ground beef and place another tortilla on top. Spoon on enchilada sauce and spread ¼” from the edges then top with colby jack cheese. Sprinkle over with diced tomatoes, black olives, and place in the oven for 10 minutes until cheese is fully melted.
Plate pizzas and top with a dollop of Toby’s Jalapeno Ranch Dressing & Dip, green onions, and iceberg lettuce. Serve and enjoy your Spicy Mexican Pizza!
