Ingredients
Graham Cracker Crust
- 2/3 cup graham cracker crumbs
- 2 tbsp. unsalted butter, melted
- 1 1/2 tbsp. granulated brown sugar
- 1/8 tsp. salt
Cheesecake
- 1 bottle Genesis Organic Strawberry Apple Juice
- 8 oz. cream cheese, thawed to room temperature
- 1/4 cup sour cream
- 1/4 cup white sugar
- 1 large egg
- 1 1/2 tbsp. vanilla extract
- 1/4 cup strawberries, sliced
- 1/4 cup blueberries
Instructions
Gather all ingredients. Preheat oven to 350 degrees F. In a medium bowl, combine graham cracker crumbs, butter, brown sugar, and salt. Mix until combined.
Line a muffin tin with muffin liners and add about a tablespoon of the graham cracker mix to each. Stamp down the graham cracker to the bottom of each wrapper. Place the tin in the oven for 5 minutes, then remove and let cool.
Heat a skillet over medium and reduce the bottle of Genesis Organic Strawberry Apple Juice for 10 minutes and set aside.
Combine cream cheese, sour cream, white sugar, the egg, and vanilla in a medium bowl and whisk for 5 minutes until smooth.
Divide the cheesecake filling evenly into each muffin tin cup. Add in a tablespoon of the juice reduction into each and marble with a fork. Place back in the oven and bake for 15-20 minutes. Place in the fridge immediately.
Meanwhile, in a medium skillet cook down the strawberries and blueberries until tender and syrupy.
Remove cheesecake from the fridge and carefully remove from each cup. Top with fruit, serve, and enjoy your Strawberry Apple Cheesecake Bites!
