Ingredients
Salad Fixings
- 3 cups Leafy greens salad mix
- 2 tbsp Goat cheese
- ½ Avocado, chopped
- ¼ cup Blueberries
- ¼ cup Strawberries, sliced
- 1 tbsp Mint, finely chopped
- Toby’s Feta Cheese Dressing & Dip
Corn Marinade
- 1 Ear of corn
- 2 tbsp Brown sugar
- 1 tbsp Honey
- 2 tbsp Soy sauce
- 1 tsp Olive oil
- ½ tsp Chili powder
- ½ tsp Garlic powder
Instructions
Gather all ingredients. Preheat the oven to 375 F. Prepare the marinade by adding brown sugar, honey, soy sauce, olive oil, chili powder, and garlic powder to a bowl and mix until fully combined. Place corn in a lightly greased baking dish. Brush marinade, or pour over all sides of the corn and bake for 15 minutes, flipping halfway through. Remove and let cool.
Meanwhile, add salad mix to a serving bowl and top with goat cheese, avocado, blueberries, strawberries, and mint. Cut the kernels off the corn cob and add to the salad. Drizzle over with Toby’s Feta Cheese Dressing & Dip, serve, and enjoy your Strawberry Avocado Corn Salad!
