Ingredients
- 1 flour tortilla
- 2 tbsp Toby’s Plant Based Dip & Spread
- ½ small avocado, thinly sliced
- 1 cup spinach, chopped
- 3 tbsp carrot shavings
- ¼ cup Cucumber spears
- 2 tbsp Pickled red onions
Instructions
Gather all ingredients. Bring 2 cup of water to boil and pour over spinach in a bowl. Let blanch for 5 minutes until deep green. Set aside and cover with a towel to dry.
Lay a tortilla on a plate and spread Toby’s Plant Based Dip & Spread one inch from the edge. Arrange avocado, spinach, carrot shavings, cucumber, and pickled red onions down the center. Roll like a burrito, folding in the sides.
Cut in half, serve, and enjoy your Summer Veggie Wrap!
