Ingredients
- ½ tbsp. cooking oil of choice
- 1 small sweet potato, sliced
- 2 cups kale, chopped
- 2 cups baby spinach
- ¼ cup broccoli florets
- ¼ cup carrots, julienned
- ¼ cup chickpeas
- ¼ cup red cabbage, shredded
- ¼ cup roasted almonds
- 1 red beet, sliced
- Toby’s Yogurt Ranch Dressing & Dip
Instructions
Gather all ingredients. Heat a large skillet of cooking oil over medium high heat. Add in the sweet potato and broccoli separate from each other and let cook for 10 minutes, flipping the potato halfway, and frequently stirring the broccoli.
Meanwhile, add the kale and spinach to a large bowl. Add the carrots, chickpeas, red cabbage, almonds, and beets. Add the cooked broccoli and sweet potato, then drizzle with Toby’s Yogurt Ranch Dressing & Dip.
