Ingredients
- 1 Tbsp olive oil
- 2 small sweet potatoes, ¼” slices
- 8 tbsp Toby’s Original Plant Based Dip & Spread
- 8 tbsp Toby’s Jalapeno Plant Based Dip & Spread
- ¼ cup cucumber, thinly sliced & halved
- ¼ cup cherry tomatoes, thinly sliced
- 1 tbsp fresh dill, finely chopped
Instructions
Gather all ingredients. Preheat the oven to 400 degrees F. Grease a baking sheet with olive oil and arrange the sweet potato slices evenly apart. Bake in the oven for 35 minutes, flipping the slices halfway until browned and tender.
Arrange the sweet potato on a serving board. Alternate between Toby’s Original Plant Based Dip & Spread and Toby’s Jalapeno Plant Based Dip & Spread on top of each slice. Place a slice of cucumber on half of the crostinis and a slice of tomato on the other half. Garnish each with a bit of fresh dill. Serve and enjoy your Sweet Potato Crostini!
