Whole Roasted Cauliflower with Blue Cheese Dressing & Dip

- 1 Whole cauliflower head
- 2 tbsp olive oil
- 4 tbsp Parmesan cheese, grated
- Salt & pepper, to taste
- 1 tsp thyme, dried
- 1 tsp oregano, dried
- 2 cloves garlic, minced
- 2 tbsp Toby’s Blue Cheese Dressing & Dip
- 1 tsp fresh parsley, finely chopped
- 1 tbsp tomato sauce
Gather all ingredients. Preheat the oven to 400 F. Prepare cauliflower by removing leaves and chopping off a half inch of the stem. Combine olive oil, half the parmesan cheese, salt, pepper, thyme, oregano, garlic in a bowl, and 1 tbsp of Toby’s Blue Cheese Dressing & Dip, mix well.
Place the cauliflower upside down in a dutch oven and drizzle with half of the oil mixture. Flip and drizzle the remaining sauce on top and spread evenly. Cover and bake for 35 minutes until tender. Remove lid and sprinkle with remaining parmesan and broil for 5 minutes until browned. Remove and let cool.
Meanwhile, spread the tomato sauce on a plate and place cauliflower in the center. Drizzle with remaining Blue Cheese Dressing and top with fresh parsley. Serve and enjoy!
