Ingredients
- 2 tbsp Olive oil
- ½ cups Butternut squash, chopped
- ¼ cup Broccoli florets
- ½ tsp Dried Thyme
- 1 tsp garlic powder
- ½ tsp Salt & pepper, to taste
- ½ cup Quinoa
- ¼ cup Roasted beets, chopped
- 1 cup Kale, chopped & blanched
- ½ cup Canneli beans, drained and rinsed
- Toby’s Feta Cheese Dressing & Dip
- 2 tbsp Feta cheese crumble
Instructions
Gather all ingredients. Heat a skillet over medium heat. Add half the oil and butternut squash, thyme, garlic powder, and salt & pepper. Cook for 10 minutes, then add broccoli and cover with a lid. Let cook for 10 more minutes until fully cooked and tender.
Meanwhile, bring ½ cup of rinsed quinoa and 1 cup of water to a boil. Lower heat and simmer with a lid for 15 minutes until liquid is fully absorbed.
Add blanched kale to two small bowls, top with quinoa, butternut squash, broccoli, beans, and beets. Drizzle with Toby’s Feta Cheese Dressing & Dip and finish with a sprinkle of feta cheese crumble. Serve and enjoy your Winter Quinoa Bowl!
