Zucchini Lasagna Rollups with Blue Cheese Dressing & Dip

- Cooking spray
- 2 Large zucchini squash, thinly peeled
- 1 cup Tomato sauce
- ½ cup Mozzarella cheese
- 2 tbsp Breadcrumbs
- 3 tbsp Toby’s Blue Cheese Dressing & Dip
- Fresh basil leaves
Gather All ingredients. Preheat the oven to 375 F. Roll zucchinis tightly to make five 1½ inch rolls.
In a 9 inch glass dish, coat with cooking spray and add a third of the tomato sauce. Smooth out sauce to make a bottom layer and arrange zucchini rolls on top. Lay out extra zucchini chunks or peels along the sides. Top with the rest of the sauce, allowing the rolls to remain visible.
Sprinkle with mozzarella cheese and breadcrumbs, then bake in the oven for 15-20 minutes until zucchini is tender and cheese is melted, set the oven to broil for the last 2 minutes of cooking. Remove from the oven and let cool.
Drizzle over the dish with Toby’s Blue Cheese Dressing & Dip and garnish with fresh basil. Serve and enjoy your Zucchini Lasagna Rollups!
