Zucchini Tomato Puff Pastry with Feta Cheese Dressing

- 9 x 6” Rolled puff pastry
- ½ cup Boursin garlic herb cheese spread
- ¼ cup Toby’s Feta Cheese Dressing & Dip
- ¼ cup Fresh basil, chopped
- ¼ cup Zucchini, sliced
- ¼ cup cherry tomatoes, sliced
- 1 small shallot, chopped
- ¼ cup Feta cheese Crumble
Gather all ingredients. Preheat the oven to 425 F. Divide puff pastry into 9 rectangles and score a border with a ¼ inch margin. Grease a baking pan and arrange the puff pastry.
In a mixing bowl, combine cheese spread and Toby’s Feta Cheese Dressing & Dip. Mix until fully incorporated. Spread mixture on puff pastry within margin.
Arrange the zucchini slices, cherry tomatoes, shallot, and basil on top of the pastries then brush edges with oil. Bake for 15 minutes until golden brown.
Place pastries on a serving dish and top with feta cheese crumble and drizzle on more feta cheese dressing. Serve and enjoy!
