Broccoli Cheese Soup With Toby’s Toast

- 1/2 cup Toby’s Original Dip & Spread

- 2 cups broccoli
we used frozen
- 4 cups vegetable broth
- 2 cups cauliflower, chopped
- 3 garlic cloves
- 1 cup carrots, chopped
- 3/4 cup potatoes, peeled + chopped
- 3 stalks celery, chopped
- 1/4 onion, chopped
- 1/2 cup almond milk (unsweetened, plain)
- 1/4 cup nutritional yeast
- Salt and pepper to taste
Gather all ingredients. Chop all vegetables, except broccoli.
Add veggies to a soup pot with vegetable broth. Bring to a boil, then reduce to simmer until vegetables are soft, ~10 minutes.
Use an immersion blender or a standard blender to blend until smooth. If you are using a standard blender, make sure to let cool for at least 5 minutes before blending.
Once blended, transfer back to pot. Add milk, seasonings, and stir until combined. Add broccoli and heat until warmed.
Serve paired with fresh or toasted bread topped with Toby’s Original Dip & Spread. Enjoy!
