Brussels Sprouts Pear Salad with Honey Mustard Dressing & Dip

- 6-8 slices bacon, chopped
- 2 cups brussels sprouts, shredded
- 1/2 cup parsley, freshly chopped
- 1 cup pecans, toasted and chopped
- 2 bartlett pears, cored and diced
- 1/2 cup gorgonzola cheese
- 2 tbsp. shallot, minced
- Salt and pepper, to taste

Another delish salad to mix things up! To begin preparing your Brussels Sprouts Pear Salad, gather all of the ingredients.
Cut the bacon strips into small pieces and cook the chopped bacon in a non-stick skillet on medium-high heat until the bacon becomes browned and crispy, this will take around 6-8 minutes. Transfer the cooked bacon to a plate lined with paper towels to help remove excess grease.
Prep all other ingredients, shred the brussels sprouts, chop up the parsley, mince the shallot, and dice the pears. In a large bowl, add in all the components the shredded brussels sprouts, the cooked bacon, chopped parsley, toasted pecans, pears, gorgonzola cheese, and shallots.
Gently toss the mixture with a hearty drizzle of Toby’s Honey Mustard Dressing, to taste. Sprinkle some salt and pepper to taste as well. Serve immediately or refrigerate.
