Ingredients
- 1 spaghetti squash, cut into four 1” rings
- 1 tbsp olive oil
- 2 cups ricotta cheese
- 4 tbsp parmesan cheese, shredded
- 1 cup mozzarella cheese, shredded
- 1 tsp garlic powder
- 1 tsp italian seasoning
- ½ tsp salt & pepper
- 1 tbsp fresh basil, finely chopped
- ¼ cup Toby’s Blue Cheese Dressing & Dip
- 8 tbsp tomato sauce
Instructions
Gather all ingredients. Preheat the oven to 400 F. Line a baking pan with parchment paper and grease with olive oil.Empty out the center of the squash rings and arrange on the baking sheet. Bake for 20 minutes flipping halfway.
Meanwhile, combine ricotta cheese, parmesan, ½ cup mozzarella, Toby’s Blue Cheese Dressing & Dip, garlic powder, italian seasoning, salt & pepper, and fresh basil to a medium sized bowl and mix well.Â
Remove squash rings carefully from the baking sheet and sprinkle mozzarella cheese for the base. Lay rings back on top of each mozzarella circle and bake for 10 more minutes until the cheese is golden and crisp.Â
Divide ricotta filling between the rings, filling the center, then gently spoon on tomato sauce. Sprinkle with more mozzarella, salt & pepper, and broil for 2 minutes until the cheese is melted and lightly golden.Â
Top with more fresh basil, drizzle with Blue Cheese dressing, serve, and enjoy your Cheesy Stuffed Spaghetti Squash!
