Ingredients
- 1 cup green beans, trimmed
- 2 large carrots, sliced into sticks
- 6 oz baby red potatoes, quartered
- ½ cup red onion, chopped
- 1 bone-in chicken thigh
- Olive oil
- Fresh rosemary
- Fresh Thyme
- Salt & pepper, to taste

Instructions
Gather all ingredients. Preheat the oven to 425 degrees F. Lightly coat a 9 inch oven safe pan with cooking spray or oil. Add green beans, carrots, red potatoes, and red onion, then toss. Next, add the chicken thigh on top. Season with salt & pepper to taste.
Drizzle evenly with a half tablespoon of olive oil and place in the oven for 20 minutes. Tuck the rosemary and thyme into the dish, then bake for 10 more minutes, until chicken is cooked through and veggies are tender.
Remove from the oven and let stand for 5 minutes before serving. Drizzle with Toby’s Feta Cheese Dressing & Dip and enjoy your Chicken & Veggie Sheet Pan!
