Ingredients
- 2-3 large butter lettuce leaves, can sub romaine
- 1/2 cup Toby’s Plant Based Dip & Spread
- 1/2 cup carrots, thinly sliced
- 1/2 cup zucchini or cucumber, thinly sliced
- 1/2 cup cherry tomatoes, halved
- 1/2 radish, thinly sliced
- Sprig of cilantro
- Sprinkle of sesame seeds or hemp hearts

This is an easy and simple recipe that’s packed with flavor. Get your veggie fix with these lettuce cups, vibrant and full of nutrients! To begin preparing your mostly raw lettuce cups, gather together all of the ingredients. Place 1-2 large butter lettuce leaves on a plate. Add a generous amount of Toby’s Plant Based Dip & Spread to the center.
Prepare the veggies by slicing the zucchini or cucumber. Then thinly slice the carrots, halve the cherry tomatoes, and lastly slice up the radish. Next is to add the sliced zucchini or cucumber, thinly sliced carrots, halved cherry tomatoes, and sliced radish to your lettuce cups.
