Ingredients
Crust
- 1 cup medjool dates
- 1 cup walnuts
- 1/4 cup rolled oats
- 1 tsp vanilla extract
Filling
- 1 cup cashews (soaked in water for at least 1 hour)
- 1/4 cup coconut milk
- Genesis Apple Ginger Juice
- 1 tbsp maple syrup
- 2 tbsp lemon juice
- 2 tbsp peanut butter
- 1 tbsp melted coconut oil
Apple Compote
- 2 apples, cored and chopped
- 1/2 tsp cinnamon
- 1/4 cup Genesis Apple Juice
Date Sauce
- 2 medjool dates
- 1/4 cup Genesis Ginger Apple Juice
- 1 tbsp. peanut butter
- 1-2 drops vanilla extract
Instructions
To begin preparing your Spiced Apple Cheesecake Bites, gather all ingredients. This recipe requires a blender and food processor.
To make the crust, start by adding pitted dates, walnuts & rolled oats to a food processor, blend until you get nice small bits of nuts/ dates. Add the “dough” to the bottom of a muffin pan. Press down evenly. Set in freezer.
For the filling, add cashews, coconut milk/ oil, maple syrup, lemon juice & peanut butter and to a blender. Blend until smooth. Add on top of crust to each dough in muffin pan. Set back in freezer until solid.
To prep the apple compote, saute apples, cinnamon and juice for 5 minutes under medium heat. We did this right before serving or keep raw if you like. For the date sauce, blend 2 dates, 1/4 cup of Genesis Ginger Apple Juice, vanilla extract and 1 tbsp of peanut butter; this step is optional. Next set in freezer until cashew base is firm. If you make it in advance, remove from freezer 20 minutes before serving, then add apples and date sauce.
